    $250 Neiman Marcus Cookies

    Course:

    Ingredients

    • 2c. butter
    • 4c. flour
    • 2 tsp.soda
    • 2c. sugar
    • 5c. blended oatmeal***
    • 24 oz. Chocolate chips
    • 2 c. brown sugar
    • 1 tsp. Salt
    • 1 – 8oz. Hershey Bar (grated)
    • 4 eggs
    • 2 tsp. baking powder
    • 2 tsp. Vanilla
    • 3 c. chopped nuts (your choice)

    Directions

    1. ***Measure oatmeal and blend in a blender to a fine powder.
    2. Cream the butters and both sugars
    3. Add eggs and vanilla, mix together with flour, oatmeal,salt,baking powder and soda.
    4. Add chocolate chips, Hershey Bar and nuts.
    5. Roll into balls and place 2” apart on cookie sheet.
    6. Bake at 375 for 10 min.
    7. Makes 112 cookies.


    Bob’s Chili

    Course:

    • 1 lb. breakfast sausage (browned)
    • 1 can tomato soup
    • 1/2 soup can of water
    • 1 can Rotel

    Add the following to taste:

    • Brown sugar
    • Red pepper
    • Salt & Pepper
    • Canned dark red kidney beans
    • Canned pinto beans
    • Chopped onions


    Jeanette’s Carrot Cake

    Course:

    Ingredients

    • 2 c. sugar
    • 1 ½ c. salad oil
    • 4 eggs
    • 2 c. flour
    • ½ tsp. salt
    • 2 tsp. baking soda
    • 1 tsp. Cinnamon
    • 2 c. graded raw carrots
    • ½ c. nuts ( optional )

    Icing Ingredients

    • 4 c. powdered sugar
    • 1- 8 oz. pkg. cream cheese
    • ½ stick of oleo
    • 2 tsp. Vanilla

    Directions

    1. Mix sugar and oil, add eggs one at a time
    2. Add carrots
    3. Add dry ingredients
    4. Grease and flour pan
    5. Bake 30 – 40 min. at 325.


    Jeanette’s Gooey Butter Cake

    Course:

    Ingredients

    • 1 pkg. yellow cake mix
    • 2 eggs
    • 1 stick oleo – melted

    Second Layer

    • 1 – 8oz. Pkg. cream cheese
    • 4 c. powdered sugar
    • 2 eggs

    Directions

    1. Grease and flour 9 x 13 pan
    2. Mix together and spread in bottom of pan
    3. Mix and pour over top of other mixture
    4. Bake 30 – 35 min. at 350
    5. Sprinkle with powdered sugar


    Martin Family Apple Cake

    Course:

    Ingredients

    • 1 1/4 cups vegetable oil
    • 2 cups granulated sugar
    • 2 eggs
    • 2 teaspoons vanilla
    • 3 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 3 1/2 cups peeled, diced apples
    • Confectioners’ sugar

    Directions

    1. In a mixing bowl, cream oil, sugar, eggs and vanilla.
    2. Add flour, baking soda, salt, cinnamon and nutmeg; blend well.
    3. By hand, stir in apples.
    4. Pour batter into ungreased 9×13 inch pan.
    5. Bake in a preheated 350 degree oven for 50-55 minutes, or until done.
    6. Sprinkle confectioners’ sugar while cake is still warm.

     


    Mimi’s Red Hot Apples

    Course:

    Ingredients

    • 1 ½ c. white corn syrup
    • 1/2 c. water
    • 8oz. pkg. red hots

    Directions

    Simmer slowly until red hots melt.

    Boil slowly 8 good size apples, peeled and quartered, with 1 T. lemon juice until tender.

    I know Mimi canned these apples.


    Mom’s Pickled Eggs

    Course:

    Ingredients

    • 2 c. vinegar
    • 1 c. water
    • 1 t. salt
    • 2 Tbl. Sugar
    • 1 clove chopped garlic
    • 1 large onion sliced thin
    • ¼ t. caraway
    • 1 whole clove (I use about ¼ c.)

    Directions

    Place in large jar with hard boiled eggs – cover tightly. The longer they stand the better (and stronger ) they are.

    Double for a gallon jar using 18-24 eggs.

    May also add uncooked smokey links.


    Ninnine’s Apple Sauce

    Directions

    Wash, core and slice apples into large pot. Add enough water so that apples will boil without sticking. Cook until apples are very soft. Drain apples and run through sieve. Add sugar and cinnamon to taste. Store in plastic containers and freeze or put in canning jars and cold pack.

    You can also wash, core, and peel apples. Then use a food processor or blender to puree the apples. Then finish the same as above.


    Strawberry Preserves

    Ingredients

    • 1c. sugar
    • ½ c. water
    • 1c strawberries

    Directions

    1. Boil until spins a thread.
    2. Add 1 c. strawberries.
    3. Let boil 5 min.
    4. Add 1c. Sugar and 1 c. berries.
    5. Let boil 10 min.
    6. Pour into granite pan and let stand 2 hrs.
    7. Pour into jars.
    8. Seal with parrifin.
